Try this recipe for a mouth-watering dessert.1 cup all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1 egg, beaten
1/3 cup macadamia nut oil
3/4 cups granulated sugar
1 cup peeled and diced fresh-ripened mango
1/4 cup macadamia nuts, chopped
1/4 cup grated coconut
1/2 cup ‘ohelo berries
Directions
1. Preheat oven to 350°F.
2. Grease and flour one 9x5-inch loaf pan.
3. Sift the flour, baking soda, baking powder and cinnamon into a bowl.
4. In a larger mixing bowl, combine eggs, oil and sugar.
5. Add dry ingredients to larger bowl (with eggs, etc.). Mix until well blended.
6. Fold in mango, nuts, coconut. Fold in ‘ohelo berries last so as not to damage them while mixing. (‘Ohelo berries may be substituted with blueberries or cranberries).
7. Pour into loaf pan and bake 50 minutes, or until toothpick inserted into center comes out clean.
8. Cool 15 minutes, then unmold onto baking rack until completely cooled.
9. Serve.
