The Maui News - The rumors have been flying for a while now—starting August 1, world-renowned chef Beverly Gannon is taking over SeaWatch Restaurant in Wailea. The 60 full- and part-time employees and two partners have all been informed, but are probably wondering why long-time owner Roy Dunn would give up on his lease on the celebrated restaurant located on the Wailea Gold and Emerald Golf Courses. Dunn—who will stay busy as owner of the Plantation House in Kapalua, Koho Grill & Bar in Kahului and the Beach House on Kaua‘i—revealed tribulations with the lease agreements with the landlords of five years.
Gannon leases her elegant restaurant, Joe’s in Wailea, from these same landlords. Gannon also owns Hali‘imaile General Store and Celebrations Catering Upcountry, and is a consultant for Lana‘i City Grill and corporate chef for Hawaiian Airlines. She said she hopes to accomplish some of the improvements Dunn has been trying to facilitate for years and is excited about taking this “jewel of Wailea… to the next level.” Gannon said she’ll freshen up the décor of the 13,000 square-foot restaurant, but won’t change the menu right away. She said that a grand reopening could take place this December after she evaluates her new business venture.
